Let’s face it:  You haven’t been using enough bacon with your stuffed jalapeno peppers.  Most recipes call for you to cut up a few strips of bacon and mix it into your cream cheese and then stuff the peppers.  That is just not enough bacon! This variation that will appeal to all of you bacon lovers.

1. I picked these beauties from my garden.  I enjoy the jalapenos and add banana peppers to give my mouth a break from the heat.

2. Remove seeds and pith. If you are sensitive to the pepper juices, consider wearing gloves.

3. I used about 1/2 package of cream cheese, or 4 oz of cream cheese for 9 pepper (or 18 halves). With approximately 2 grams of carbs per ounce, I only used 8 grams of carbs total for all of these.

4. Bacon. I cook my bacon in the oven at 350 degrees and turn it at least 2 times. You’ll have to check until you get your system down. I like my bacon where the fat just melts in my mouth and is not quite yet crispy. It is your choice on how long to cook your bacon.

5. Place my stuffed peppers in the toaster oven for 20 minutes. Depending on how “done” you enjoy your peppers, cook them shorter or longer. For me, as soon as there are a few toasty brown spots on the cream cheese, it is done.

6. Add your fresh picked cherry tomatoes and an avocado for the perfect meal.

7. Use approximately 1/2 slice of bacon per pepper. You’ll thank me later. Enjoy!

Weight Loss For Rock Climbers: My Climbing Went From V2 to V6!

My climbing abilities jumped:  I had never sent a V3.  Afterwards, I was able to send a few V5’s and V6’s.  This is my story of how I lost 22 lbs. of fat, gained 7 lbs. of muscle and improved my climbing from V2 to V6.

 

The usual disclaimer: This is just my experience and my opinion. This is what works for me. If you have a different experience, feel free to share in the comments. I am not a doctor, nor do I play one on the interwebs.  However, I embrace the concept of self-experimentation and the value of N=1 data for personal improvement.

 

MY PERSONAL THEORY FOR IMPROVING CLIMBING

  1. Improvement in overall fitness should lead to improvements in climbing
  2. Improvement (reduction) in Body Fat Percentage should lead to improvements in climbing

My Experiment

All I wanted to do was lose some belly fat (maybe even lose weight fast) and climb a little stronger.  I didn’t have an end weight in mind and I really didn’t know if I would lose weight or add muscle or both.  Mentally, I was prepared to just accept the data.  And I had no idea how this would affect my climbing.  I was hopeful that I would get stronger; I just didn’t know how much stronger. Scrambled Eggs With Peppers Topped With Lorraine Swiss and Fresh Basil

The World's Best Scrambled Eggs

Welcome To The World’s Best Scrambled Eggs

Prep Time: 3 minutes.  Cook Time: 3 minutes.

Ingredients

  • 2 eggs scrambled
  • 1 Tbsp bacon fat
  • 1 Tbsp sliced jalapenos
  • 1 whole sweet mini pepper
  • 1 slice Lorraine Swiss
  • Plenty of fresh basil
  • Salt to taste
  • Top with your favorite salsa or Pain Is Good Smoked Jalapeno Salsa

Instructions

  1. Heat pan on medium low.
  2. Crack eggs into bowl.  Scramble with fork.
  3. De-stem, core, slice pepper.
  4. Add jalapeno and sweet pepper slices to eggs.  Scramble.
  5. Add 1 Tbsp bacon fat to heated pan.
  6. Pour scramble into pan.
  7. As soon as edges set up, flip the scramble.
  8. Do not allow the eggs to brown.
  9. Transfer eggs to lightly salted plate
  10. Top with Lorraine Swiss, fresh basil, and salsa
